Edible hiking
I have been able to do a little hiking in my area. Fortunately the trails near my house in the mountains of Southern Appalachia are full of edible foods. I love hiking and finding a treat whether is it chanterelle mushrooms, fresh wild blackberries or spring onions.
I was able to find some wild spring onions or scallions close to my house. Fortnuately, as everything blooms so do these wild onions and It is the season for them. Of note, they are similar to wild garlic but smell more like onions and doesn't have a purple tint to them like wild garlic.
Wild Onions have many health benefits and so I love to add them my dinner for an added zing. Scallions are packed with Vitamin K, Vitamin C, Folate and have a high fiber content. This means that they are an amazing addition to any meal.
